Fruit salad…out of paper

Elliott made me a fruit salad when he came home from school today.  While I can’t eat this particular fruit salad because it happens to be made of paper, it still looks good enough to eat.  :-)

He made: Watermelon, strawberries, bananas, lime,  oranges and cherries. 

Yummy :-)

What $60 buys at the farmers market

The Lost and Tired family has been moving into the whole foods lifestyle over the past few months.  We are trying to eliminate as much processed foods as possible from our lives.

This is not am easy task but one that is worth the challenge. 

Today we visited the Hartville Flea Market and stocked up on fresh fruit,  turkey and chicken breast.

In the picture below,  you can see all the fruit we managed to aquire today for $60. They are as follows:

1) 2 Flats of Strawberries
2) 6 lbs of red,  seedless grapes
3) 4 lbs of black or purple seedless grapes
4) 2 lbs of fresh green beans
5) 10 lbs of fresh peaches
6) 10 lbs of fresh plums
7) 4 lbs of bananas (for freezing)
8) 6 lbs of large blackberries

All the fruit is fresh and really in good shape. We washed and placed everything that would fit in the fridge,  in the fridge.  The rest is in the freezer. 

The boys love to munch on fruit throughout the day. I love that they are eating healthy. 

The fruit that has been frozen will be used in smoothies and banana ice cream.  It’s soooooo nice to have fresh fruit in the house once again.

#Autism: Eating Fruits and Veggies

My kids are very picky eaters,  with the exception of Gavin.  Gavin used to be horribly picky but has really made progress over the years and is by far the easiest to feed. I have to give mad props to Gavin for that.  :-)

Elliott and Emmett are a different story all together. They are extremely picky and getting them to eat fruits or veggies is quite often impossible. I have been doing something lately that has really helped. 

I mentioned before about banana ice cream but I wanted to update you all as to how this is going.

Basically,  I freeze bananas and strawberries,  blueberries etc. Then I take them and stick them into the blender and let’er rip.

Frozen bananas taste like ice cream and when you add additional fruit it not only adds flavor but also color.  This is important because my kids are sensitive to things like color.  This gives them some control over the outcome and they love it.

They think they are eating ice cream when they are simply eating frozen fruit.  You can even mix in some veggies and they likely won’t notice them.

The good thing about this issue that it’s 100% healthy and 100% whole food.  This is a great way to not only provide your kids with the means to eat healthier but also teaches them to make healthier choices on their own. 

I just wanted to share this with you all again because this is still working great for us.

Today’s Victory: 04/28/2012

Today’s Victory is brought to you by all three Lost and Tired boys.  Typically,  I have a very difficult time getting the boys to eat their fruit or veggies.

Today the boys ate fruit salad with their dinner.  We had mango,  apples, bananas, strawberries, blueberries and raspberries. 

Even Emmett got in on eating the fruit salad.  His favorite was the mango and he ate a few pieces.

After the day I’ve had today,  this was a welcomed victory.

From my perspective: What’s for breakfast

At this very moment,  I’m staring at my breakfast. I’m working really hard to get and stay healthy.  I started by adjusting my diet.  I’m eating a ton of fruit and working on the veggies.  :-)

This morning I’m having a fruit salad for breakfast. It included the following:

Pineapple
Green Apple x1
Banana x1
Strawberry x3
Yogurt x .5 cups
Kashi Granola x .5 cups

1 glass of chocolate soy milk

This is pretty random but I wanted to share a little bit more about me.  :-)

Everyday Lessons: Food Choices

So this is another edition of Everyday Lessons. In posts under this title I show specific examples of how I use everyday things to teach important lessons.

One of the things that my wife and I have always struggled with was ensuring the kids have a healthy, well balanced diet. Due in part to all three of my boys being on the Autism Spectrum, this have proven to be a rather difficult task. 

They each have their own unique proclivities with food. Sometimes they don’t like the texture, color or even the look of food items and will simply refuse to eat them.

This has been especially true with Elliott and Emmett.

So what I like to do is try to provide choices for them that are healthier. I also try to help them make food choices that are better for them, on their own.

On of the ways I do this is by including them in the grocery shopping. I guide them through the process of identifying foods that are part of a balanced diet. They learn how to pick out fruit and veggies that are ripe and not cucky, as my kids like to put it.

They also learn to pick healthier snacks as well.

One of the things that I have found while doing this is that, my kids are more likely to try something new, if they were involved in picking it out at the store.

I make it a point to explain how and why eating a banana instead of a cookie is better for their body. While my kids still enjoy junk food, they are able to make healthier food choices on their own.

At least with my boys, I noticed that if I help them to understand more about why their bodies need certain foods in order to help stay healthy, they respond in a more positive way. I think it helps them to feel more in control and that helps to foster independence as well.

Fruits and Veggies any way possible

One of the most difficult parts of raising 3 boys in the spectrum for us is their diet.  Emmett has food allergies so he’s restricted and everyone else has texture issues with foods. 

I’m always worried about their diets being balanced or healthy enough. Personally,  I love fruit but hate most veggies.  I have taken to making smoothies in order to get my intake of veggies up.  I tried this approach with the boys but it was usually a no go,  with the exception of Gavin.

However,  yesterday Emmett decided to help me make my smoothie.  Here is what we added:

Kale
Spinach
Collard Greens
Carrots
Green beans
Blueberries
Strawberries
Bananas
Flax meal
Cherries
Red grapes
Oatmeal
Soy milk

We blended it all up and Emmett actually drank it.  Hey was however,  insistent about drinking it out of a measuring cup but I figured,  whatever works…right. 

I think the key here is letting him help make it.  He the becomes excited to drink it.  I usually make this smoothie everyday for myself except I typically add yogurt to the mix.  I switch fruits and veggies but the ones I use are consider super fruits for the most part.

Elliott is way more picky and doesn’t like the look of the smoothie.  However,  I’ll keep working on that with him. Gavin on the other hand can’t get enough. So we move a few small step forward and I can live with that.
